  1. Wash your matumbo thoroughly, drain water n cut into medium
  2. Boil with salt,a piece of ginger n Rosemary with stem(I boil mine in a jiko for longer till tender) once done drain the water. Boiling matumbo needs patience
  3. Prepare your ingredients
  4. Spices
  5. Saute onions till pink
  6. Add ginger garlic paste n cook for a min then add the spice's n stir constantly
  7. Add the carrots, green bell pepper, coriader stems,(leaves will be added last) tomatoes, salt n cover in low medium heat.
  8. Add tomato paste n stir to mix
  9. Add matumbo n mix inn well then add 1/4 cup water n cover to cook for 5-7 mins in low medium heat. (if u want a more gravy adjust the water) I prefer mine a little wet
  10. Add coriader leaves n mix inn then serve with Ugali
