Stir in the spinach, a handful at a time, stirring until each addition of spinach wilts. This chickpea curry is not only healthy, but delicious too. Add the spinach, then stir through the chickpeas until it wilts a little. Remove from the heat, season to taste, then serve warm with crusty.
Instructions to make Chickpea-Spinach Croquettes:
- Blanch the Spinach leaves using some water for 5 minutes
- Discard the water next and chop the leaves roughly
- Add the spinach in a blender, followed by the chickpeas
- Add salt, paprika, garlic, coriander seeds and pepper corns
- Use some oil and blend until smooth
- Transfer the mix in a bowl and add the gram flour/ bread crumbs
- Mix well and refrigerate 10 minutes covered
- Heat oil in a pan
- Prepare croquettes of the mixture
- Shallow fry them in batches
- Flip and fry until brown and crisp on both sides
- Place the fried croquettes on an absorbent paper for sometime before serving
- Serve while warm with dips of your choice (yogurt-tahini Dip is recommended here.)
