- Begin to boil a large pot of salted water for the tortellini
- brown sausage well in large pan and drain any fat from cooking.
- Add Alfredo sauce, tomato paste, white wine and Italian seasoning to the sausage in pan. Stir well and bring to a low boil. Lower heat and simmer for 3 minutes. salt and pepper to taste.
- Add spinach to the pan and begin to fold into sausage and sauce. It will only take 2 minutes to wilt it.
- Drain tortellini and place in a large pasta bowl. Add the sausage, spinach and sauce mixture and gently mix. Top with Parmesan cheese.
