After they're done remove and put on paper towel and let it cool for few minutes before serving. Rinse the Tilapia fillets in cold water and drain thoroughly. Season the flour with salt and pepper and coat the fish lightly. A lot of the time, I think they just taste like pencils. Also, most recipes I've come across use cod, but tilapia is what I had on hand, and it was delicious.
