- Once your onions have become tender and shinny add in your diced garlic.
- Continue stirring until the onions start to brown.
- Add in your chopped tomatoes and continue stirring..
- Once the tomatoes are slightly cooked add in a tsp of tomato paste and mix together.
- Add in a few drops of water to allow the tomatoes to cook.
- All the water has dried up and our tomatoes have cooked through to form this paste.
- Add in Salt and tanduri masala.
- After adding the spices and salt add 1/2 a cup of water to your pan and bring to a boil.
- Add in your fish and cover it with the tomatoes and let each side cook for atleast 10 minutes so that the fish can absorb all the juices.
- After both sides have cooked pour in coconut milk(i mixed the coconut powder with hot water) and let it cook for a minute.
- Put out the fire and let it cool for a minute or two then you can serve with rice or ugali. Bon appetite 😋😋😋
