The ingredients needed to make Sabudana Vada / Sago Patties:
- Take 1/2 cup Sabudana/Sago
- Get 2-3 boiled Potato, mashed
- Make ready 1 Green chilli, chopped
- Make ready 1/2 cup Less than Kuttu aata/Buckwheat flour
- Prepare 1.5 tsp grated ginger
- Get 1 tsp Red chilli powder
- Make ready 1 1/2 tsp Coriander powder
- Take 1/4 tsp Black pepper powder
- Take as required Vegetable oil for deep frying or shallow frying
- Prepare as required Rock salt
- Prepare As required Fresh Coriander leaves, chopped (optional)
Sabudana Vada is one of the most popular snacks from Maharashtra. Sago/Sabudana pearls along with potatoes are deep fried to make these crisp indulgent Vadas. These sago patties are made in very less ghee and can be consumed during fasting. Soaked Sago Pearls- ½ cup If you are not preparing these for the fasting period then you can add normal salt and variety of masalas in it.
Instructions to make Sabudana Vada / Sago Patties:
- Add 1/2 cup of sabudana in a bowl, rinse them 2-3 times. Drain the water and soak them in one and a half cup of water.. for at least 6 hours. Once they are soaked well, drain the water and transfer the soaked sabudana in a mixing bowl.
- Add mashed potatoes, chopped green chillies, red chilli powder, coriander powder, black pepper powder, dry ginger powder, chopped coriander leaves, grated ginger, rock salt and Kuttu aata.
- Combine everything well. If the mixture is sticky then grease your palms with oil and make flat patties (as shown in images.)
- Now heat oil in Kadhai. Drop these patties carefully in Kadhai. Fry these on medium-low heat, till they turn golden brown and crisp. Once done from both sides, transfer these on plate.
- Serve hot with tamarind or coriander chutney.
