Steps to make Coriander Rice:

- Wash and soak the rice for 30 min. Cook the rice by adding ghee and let it cool completely. Fry the cashew in little ghee and keep aside. - - 2. Now heat 1 tsp of oil in kadai add onion, green chilli and coriander saute for 3 to 4 minutes. Let it cool down and grind into smooth paste. Keep aside. - - 3. Heat remaining oil in kadai add mustard, urid dal, curry leaves and hing.

- When it starts to splutter add the coriander paste. saute for just 5 sec. Now add the rice mix well. - - 5. Garnish with cashews and coriander. Serve with cucumber raita or any of your choice.
