- heat a pan with oil on a med-high heat. add the chicken and rotate every few minutes until golden allover but not cooked. add the onions, garlic, soup, sweetcorn, parsley, salt and pepper. stir
- add half the cheese to the pan, stir until melted then pour into a casserole dish. top with remaining chees and bake until chicken juices run clear and cheese is crispy
- I served chicken next to buttery jacket potato with sauce on top and then extra cheese and parsley
