Sweet potato halwa, also known as shakarkandi ka halwa, is an Indian sweet potato pudding. It's basically the Indian version of sweet potato casserole. Instead of pecans and marshmallows, this halwa has juicy plump raisins, plenty of nut garnish and is spiced with ground cardamom.

The ingredients needed to make Sweet potato Halwa:
- Prepare 1 kg sweet potato
- Make ready 1 cup milk
- Make ready 1 1/2 tbsp sugar
- Take 2 tbsp ghee
- Make ready 1/2 tsp cardamom powder
- Make ready 1/4 cup chopped nuts (cashews, almonds, pistachios)
- Prepare 6-8 saffron strands
This halwa/sheera is made from boiled, mashed sweet potatoes, milk, and sugar. It is flavored with cardamom and nutmeg powder. Sweet potatoes are known as Shakarkand in Hindi hence It is called shakarkandi ka halwa. Delicately flavored and lightly sweetened sweet potato halwa is a perfect dish that can be enjoyed for breakfast or dinner.
Steps to make Sweet potato Halwa:
- Firstly, pressure cook the sweet potato for 1 or 2 whistles. Let them cool down completely.
- Peel and mash the boiled sweetpotato.
- Heat 1 tbsp ghee in a pan on low medium heat. Once heated add in the mashed sweet potato.
- Saute for atleast 5-8 minutes or till it starts changing the colour.
- Now add in the milk, saffron and sugar. Mix well and cook on low flame till the milk absorbed completely. Keep stirring continuously.
- Add leftover ghee, cardamom powder and nuts. Mix and saute for just one more minute and it's done.
- Garnish with some more nuts and serve hot.
