- Wash and soak rice and dal separately for 3-4 hrs along with saunf and rice flakes. Grind it to a smooth paste. Mix both the purée. And cover and keep overnight for fermentation.
- Cheese sauce: mix all ingredients for cheese sauce and microwave it for two mins for four times in 30 seconds batches keep stirring every time. Then blend it with help of blender to get a very smooth texture of cheese sauce.
- Now take a pan, add oil heat it. Add all vegetables of your choice I used bell peppers, cabbage and carrots. Cook on high flame as we cook for chowmein. Boil noodles (I used aata noodles) in salty water, strain and keep aside. Add soy sauce and chilli sauce and tomato sauce to the cooked vegetables, add salt and red chilli flakes mix well and turn off the flame.
- Heat a pan, grease it and add spoonful of soda batter, spread evenly and a bit thick layer. Add butter and spread a rich layer of cooked veggies over the dosa. On top of veggies now spread a very rich layer of cheese sauce and ketchup. sprinkle sprig onion for garnish.
- Cover and cook for 2-3 mins, take it out on a plate and cut into strips and make the cheesy dosa rolls and serve hot. Serve it a ready and quick fix dinner, is a very innovative and fusion dish.
