Steps to make No Onion No Garlic Biryani : Soya Chunks Biryani:
- Wash the basmati rice, put it in a vessel and bring it to boil. Remove the par boiled rice aside by staining the water completely.
- .Grind all the ingredients given under “ To grind” to a smooth paste.
- Drain the soya chunks and put in hot water for 10 minutes.
- In a small bowl take 1 tbsp milk and add the saffron.
- Heat a pan by adding oil.Saute bayleaf, star anise and cinnamon.Add soya chunk pieces.Saute for a minute.Now add the ground paste and saute till raw smell goes off. Keep the masala mix aside
- For layering the biriyani, take a pan make a bottom layer with part of masala mix then add part of rice and salt. Add saffron milk on ghee. Repeat the layers for 2 times. On the top sprinkle biriyani masala and cover and cook under low flame for 8-10 minutes. Rice will get cooked completely.
- Turn off the flame and let the biriyani rest for another 10 minutes and then serve hot with carrot raita.
