The ingredients needed to make Shahi Soya /Nutrela Pulao:
- Prepare 3 cups cooked long grain basmati rice
- Make ready 1/4 tsp saffron (kesar) strands
- Take 2 tbsp ghee
- Make ready 1 star anise
- Prepare 2 cloves
- Prepare 4-5 whole black pepper
- Take 2 green cardamom
- Prepare 1 black cardamom
- Take 4 bay leaves
- Take 2 cinnamon sticks
- Prepare 1 tsp caraway seeds /shahi jeera
- Prepare 1/2 tsp cumin seeds
- Take 1 tsp finely chopped green chillies
- Take 1/2 red chilli powder
- Prepare 1/4 th cup french beans finely chopped
- Prepare 1 carrot medium chopped
- Prepare 1/2 cup boiled green peas
- Take 1/2 cup soya/ Nutrela mini chunks, washed and soaked in water
- Get 1 tbsp pineapple chunks small
- Get 1 tbsp milk
- Make ready to taste Salt
- Prepare For the garnish
- Make ready 1 tbsp fried cashewnuts
- Get 1 tbsp Green Coriander chopped
Add onion and sauté till lightly browned. Add cooked Nutrela Soya chunks, ginger paste, garlic paste and tomatoes and sauté till tomatoes become soft. Add green peas, carrot, pav bhaji masala, red chilli paste and a little water. Salt, Red chilli powder, Garam Masala(Indian Seasoning) to taste.
Instructions to make Shahi Soya /Nutrela Pulao:
- Firstly combine the saffron and 1 tbsp of warm water in a small bowl, mix well and keep aside.
- Heat 1 tsp ghee in a broad pan and sauté the french beans, carrots and green peas and pinepple for 2 minutes on a high flame.
- Add soaked nutrela chunks and again sauté for a minute.
- Take it out in a bowl and keep aside.
- Heat the ghee in the same pan, add the cloves, star anise, cinnamon, black and green cardamoms, caraway seeds, cumin seeds, green chillies and bayleaf and sauté on a medium flame for a few seconds.
- Add the chilli powder, and sautéed vegetables and nutrela soya chunks and green peas and sauté on a medium flame for 1 minute.
- Add the rice, saffron-milk mixture and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Garnish with cashewnuts and chopped coriander and serve hot and aromatic shahi pulao immediately with any raita or curry.
